THE OYSTERS OF LOCMARIAQUER by Eleanor Clark (HarperPerennial: $10.). Clark won a 1965 National Book Award for this entertaining examination of oyster culture in Brittany. The tiny town of Locmariaquer has been a center for the cultivation of the Belon or Armoricaine oyster, an especially flavorful variety, for nearly a century. Everyone in the town seems to be involved with some aspect of oyster farming, and Clark discusses the habits, customs and legends of the locals in a series of charming digressions. Despite the opposition of a few uncooperative bureaucrats, Clark succeeded in writing a lively account of a highly unconventional subject.
