DEAR SOS: I recently dined at Bandera, a very popular restaurant in Scottsdale, Ariz., where we had the wonderful Millionaire’s Club Steak served with the restaurant’s famous mashed potatoes. Any possibility of obtaining either recipe?

DEAR SUSAN: The Bandera people sent us the steak recipe but say that their mashed potatoes are “on top of the trade secret list.”

MILLIONAIRE CLUB STEAK

WORCESTERSHIRE BUTTER

1/2 cup (1 stick) butter, at room temperature

2 tablespoons Worcestershire sauce

3/4 teaspoon freshly ground black pepper

MARINATED STEAK

6 tablespoons prepared deli-style mustard

1/4 cup tamari soy sauce

2 tablespoons garlic powder

1 1/2 teaspoons freshly ground black pepper

3/4 teaspoon crushed red pepper flakes

3 tablespoons brown sugar, lightly packed

1 cup olive oil

2 (2-pound) tenderloins

Worcestershire Butter

WORCESTERSHIRE BUTTER

Blend butter, Worcestershire sauce and pepper in mini-processor or mix with wire whisk until completely combined.

MARINATED STEAK

Combine mustard, soy sauce, garlic powder, black pepper, red pepper flakes and brown sugar in blender. With blender running, slowly pour in olive oil, until mixture resembles mayonnaise.

Rub tenderloins with marinade mixture on all sides. Place in shallow dish and marinate, covered, 8 to 36 hours.

When ready to cook, place marinated steaks on coolest spot on hot grill. Grill tenderloins about 25 minutes for medium rare. Allow tenderloins to rest 10 minutes.

Slice and place 1 tablespoon of Worcestershire Butter on top of each slice, spreading slightly over all slices. Butter should melt naturally. Serve at once. Reserve any remaining Worcestershire Butter in refrigerator for future use.

8 servings. Each serving with 1 tablespoon butter:
