Dwayne Helmuth, the winemaker at Callaway Vineyard & Winery, hosts a three-course dinner at the winery. The evening begins with hors d’oeuvres and a tasting at which he shares some of his favorite wines and tells how each is made. The main course is noisettes of Colorado lamb with toasted Parmesan and sweet corn polenta, paired with Callaway’s 1996 Merlot.
