It’s Almost Sushi

I do lots of less-than-30-minute meals on days I get home from work late and still need to feed my family. Here’s our favorite.

I buy 1 1/4 pounds of ahi tuna, a few tablespoons of wasabi and half a cup or so of pickled ginger. I put the rice on to boil (done in 20 minutes) and prepare a salad. Ten minutes or so before the rice is done, I sear the tuna in a little olive oil. I like my tuna pretty rare, so I cook it for about 3 minutes a side, but if you like it pink instead of red, you can do 4 or 5 minutes instead (be careful not to overcook it). By the time the rice is done, so is the tuna. I serve the seared tuna with wasabi, soy sauce and pickled ginger, rice and salad. Kind of a seared sushi, if you will.
