Everyone seems to like quesadillas, even though they can get a little ho-hum. You can add zip to yours by using Teleme cheese. It’s so full of flavor, you need only a small amount for each tortilla.

I like these quesadillas either open-face or flat. Try to buy the thickest tortillas you can find. That way, they’ll be easier to pick up and eat by hand.

Heat them on the stove, rather than frying them, to keep them light.

The sweetness of the mango salsa complements the Teleme. Any leftover salsa can be served on the side or as an accompaniment to grilled fish or chicken.

Teleme Quesadillas With Mango Salsa

Active Work and Total Preparation Time: 40 minutes plus 30 minutes standing

1 cup chopped tomatoes

1/4 cup chopped red onion

1 cup diced mango

1/2 jalapeno, seeded and minced

1 clove garlic, minced

1 tablespoon lemon juice

1/2 teaspoon minced oregano

1/4 teaspoon salt

12 corn tortillas

3/4 pound Teleme cheese

12 sprigs cilantro

* Combine tomatoes, onion, mango, jalapeno, garlic, lemon juice, oregano and salt in small bowl. Let stand 30 minutes for flavors to develop.

* Heat tortillas, one at a time, on top of open gas burner, turning with tongs until tortilla is toasted on both sides, 30 seconds to 1 minute per side. Top each hot tortilla with 1 tablespoon Teleme cheese, spreading slightly. Spoon 1 tablespoon mango salsa over cheese and top with cilantro sprig.

12 servings. Each serving: 176 calories; 282 mg sodium; 28 mg cholesterol; 9 grams fat; 17 grams carbohydrates; 8 grams protein; 1.27 gram fiber.
