Muldoon’s Chicken Noodle Soup

Active Work Time: 40 minutes * Total Preparation Time: 2 1/2 hours

1 (3 1/2-pound) chicken

Water

2 large onions, chopped

2 1/2 cups chopped celery

2 1/2 cups chopped carrots

4 bay leaves

1 tablespoon black peppercorns

1/4 cup olive oil

1 teaspoon white pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1 cup chopped green cabbage

1/2 pound egg noodles

1/2 cup petite green peas

Salt

* Place chicken in large pot and cover with water. Add 1 onion, 1 cup celery and 1 cup carrots. Add bay leaves and peppercorns and bring to boil. Reduce heat to medium and simmer 1 hour. Skim fat occasionally. Remove chicken and set aside to cool. Strain chicken broth and reserve. Discard bay leaves.

* Separate chicken meat from bone and cut into cubes. Discard bones.

* In medium pot, saute remaining celery, carrots and onion in olive oil until tender, 15 to 20 minutes. Add reserved chicken broth, white pepper, thyme, oregano and cabbage. Bring to boil. Add egg noodles and simmer until tender, 5 minutes. Add peas and chicken and simmer 20 minutes. Season to taste with salt.

DEAR SOS: My husband and I just completed a road trip that included a stop for lunch in Mendocino. My husband, a meatloaf aficionado, loved the Mendocino Hotel’s meatloaf and declared it the best he’s ever had. Could you possibly acquire the recipe?

DEAR JACKIE: The Mendocino Hotel people were happy to part with the recipe to please your husband and all other meatloaf lovers. The recipe does not call for salt and pepper because salt from the bacon and flavorings suffice for most tastes.

Mendocino Hotel Meatloaf

Active Work Time: 20 minutes * Total Preparation Time: 1 hour 20 minutes

1 1/2 pounds ground round

1 egg

1/2 stalk celery, chopped

1/4 onion, chopped

1/4 carrot, chopped

1 teaspoon celery salt

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

3/4 cup ketchup

1 1/2 cups fresh bread crumbs

1 tablespoon Worcestershire sauce

6 strips bacon

* Gently combine ground round, egg, celery, onion, carrot, celery salt, oregano, thyme, ketchup, bread crumbs and Worcestershire sauce.

* Line 9x5-inch loaf pan with 3 strips bacon. Pack meat mixture into pan and top with remaining bacon strips. Cover with foil and bake at 425 degrees 45 minutes, then remove foil and bake until meat thermometer inserted in center of loaf reaches 175 degrees, about 10 minutes more.

6 to 8 servings. Each of 8 servings: 331 calories; 549 mg sodium; 60 mg cholesterol; 23 grams fat; 12 grams carbohydrates; 16 grams protein; 0.11 gram fiber.
