The Boulders, a spa and golf resort near Phoenix that has AAA’s highest rating, five diamonds, offers rooms in summer at a fraction of high-season rates. The downside: daytime highs that average nearly 100. From Monday to Sept. 5, what the resort dubs “ casitas “--650-square-foot one-bedrooms with fireplaces--go for $149 per night, subject to availability. Published high-season rates (Sept. 15 to April 15) go up to $625. Golf is a bargain too: $75 per person per day for unlimited play, compared with $220 per round in high season.
