I would have to agree with Mimi Sheraton that many of the highly rated restaurants in the Zagat (public opinion) guide leave me scratching my head (“Sheraton Zaps Zagat,” Aug. 29). As a restaurant reviewer and chef, I have found that the trained palate is not the general public’s palate. Ultimately we are only giving our opinion, and much of the public probably doesn’t even agree with it.

The bottom line is that if the masses like it, then it really doesn’t matter what we say. After all, food doesn’t have to be good for a restaurant or restaurant chain to be wildly successful and have scores of customers lining up for their mediocre fare.
