First Look: Avec Nous, the new restaurant at Viceroy L’Ermitage Beverly Hills hotel

Avec Nous, the restaurant replacing Livello restaurant and lounge at Viceroy L’Ermitage Beverly Hills hotel, is scheduled to open early next year as a contemporary French bistro.

Livello opened at the hotel in 2011, shortly after the Viceroy Hotel Group took over as the hotel’s operator in 2010.

Olivier Quignon, who most recently worked at Bar Boulud in New York City, has signed on as executive chef. His menu, inspired by the French Riviera, will feature a selection of housemade charcuterie.

Other menu highlights will include whole roasted cauliflower, côte de boeuf, garlic potato soup, Nicoise salad and ahi tuna crudo.

The cocktail menu, designed by Alex Bachman (a veteran of Yusho, Billy Sunday and A10, all in Chicago), promises Bachman’s versions of classic drinks — think Old Fashioneds and Manhattans.

Also, expect a private chef’s table where the restaurant will house most of its wine collection, curated by Conrad Reddick (Alinea), and hold private tastings and parties.
