Sausages on Grill Perfect for Dad : Sauces, Marinade Make Ideal Mates for Bratwurst, Frankfurters

For Father’s Day, barbecue a delicious combination of sausages on the grill. Dad will be delighted with bratwurst, brotwurst, knackwurst, kielbasa and frankfurters, all ideal grill mates using marinades or brushing on sauces during cooking.

For interesting smoked flavorings, whole sage leaves, mint or bay leaves may be laid on the sausages, on the grill or even skewered between chunks of sausage.

Here are two sauce recipes that will be delicious brushed on sausages during grilling. Herbs give sausages a unique flavor in Herb Marinade.

CELERY SEED-HONEY SAUCE

1/2 cup pineapple juice

2 teaspoons cornstarch

1/4 cup honey

1/2 teaspoon celery seeds

Dash paprika

Combine pineapple juice and cornstarch in saucepan and mix well. Stir in honey, celery seeds and paprika. Heat over low heat until thickened. Brush on sausages during grilling. Makes about 3/4 cup sauce.

GINGER BASTING SAUCE

6 small ginger snap cookies, crushed

1/2 cup brown sugar, packed

1/4 cup vinegar

1 cup hot water

1/4 teaspoon salt

1 small orange, thinly sliced

1/2 cup pineapple juice

Combine cookie crumbs, sugar, vinegar, water, salt, orange and juice in saucepan. Bring to boil, then reduce heat and simmer 10 minutes or until slightly thickened. Brush on sausages. Makes about 1 1/2 cups.

HERB MARINADE

1/2 cup oil

2 teaspoons oregano

1/8 teaspoon ground nutmeg

1/8 teaspoon thyme

1/8 teaspoon marjoram

1 clove garlic, cut in half

Combine oil, oregano, nutmeg, thyme, marjoram and garlic in shallow pan. Use to marinate sausages in refrigerator overnight. Makes about 1/2 cup marinade.
