LOW-FAT : A <i> Light </i> Bavarian Cream?

This is a very light, refreshing low-fat dessert that’s perfect for early fall entertaining. Not only is it easy to make, but it looks elegant when spooned into crystal goblets.

You may prepare this dessert the day before or the day of your party. Served topped with raspberry sauce, it’s a refreshing end to any dinner party.

BAVARIAN CREAM WITH RASPBERRY SAUCE 1 tablespoon unflavored gelatin 2 tablespoons cold water 1 1/2 cups nonfat milk 1/4 teaspoon salt 1/4 cup sugar 1/4 teaspoon vanilla 1/4 teaspoon almond extract 1 cup low-fat whipped topping 1/2 pint raspberries

Sprinkle gelatin over cold water to soften.

Heat milk to simmering. Stir in salt and 2 tablespoons sugar. Stir in softened gelatin until dissolved. Stir in vanilla and almond extract. Chill until slightly thickened. Fold in whipped topping. Spoon into stemmed glasses and chill until set.

Puree raspberries with remaining 2 tablespoons sugar and strain. Spoon over chilled almond cream and serve. Makes 4 servings.
