Cocktail: A Rossini at TiroVino

Sunday is Mother’s Day, and although you know that Mom wants a delicious brunch — preferably served in bed — you also suspect that, thanks to you, she could use a drink. TiroVino, the cozy new restaurant and wine bar on Melrose has just thing. It’s a Rossini, a satisfying twist on the Bellini (a classic drink beloved by mothers the world over) that employs strawberry juice instead of the peach juice that first made the drink famous at Harry’s Bar in Venice, Italy. Your mother will likely be pleased by the hint of tart zing that is added thanks to a dash of fresh lemon juice, and chef Davide Giani will also be serving his take on classic French toast. It’s called Torta di Spagna and it’s made using homemade sponge cake instead of bread. TiroVino owner Maurizio La Rosa, whose Rossini recipe is featured, says sponge cake is used because it makes for a “lighter, fluffier texture and sweeter taste.”

A take on the Rossini cocktail by Maurizio La Rosa

4 cups sliced fresh strawberries

3 tablespoons distilled water

3 tablespoons fresh lemon juice

1/3 cup white granulated sugar

1 chilled bottle of Prosecco or Champagne

Heat sugar and water over medium-high heat, stirring, until sugar dissolves. Remove from heat and purée with sliced strawberries and lemon juice until smooth. Strain and set aside liquid. Fill a chilled Champagne flute or wine glass a third of the way with strawberry purée and fill remainder with Prosecco or Champagne. Garnish with a strawberry.
