This Old House: Homeowners embark in new project, hoping to turn a two-family Victorian-era house in Cambridge, Mass., into a one-family home (Noon KOCE).

The Big Bang Theory: Sheldon (Jim Parsons) hires an attractive new assistant (Margo Harshman) who makes Amy (Mayim Bialik) very, very nervous in this new episode (8 p.m. CBS).

The Vampire Diaries: In the season premiere, Elena (Nina Dobrev) awakens and realizes she died with vampire blood in her system and now must become a vampire. Paul Wesley, Kat Graham, Ian Somerhalder also star (8 p.m. KTLA).

Beauty and the Beast: A police detective (Kristin Kreuk) solves crimes with help from a presumed-dead doctor (Jay Ryan) with a bizarre secret — when provoked, he transforms into a mighty supercreature — in this new updating of both the fairy tale and the late 1980s television series of the same name (9 p.m. KTLA).

Project Runway: Tim Gunn visits the final four designers’ hometowns (9 p.m. Lifetime).

It’s Always Sunny in Philadelphia: The raunchy comedy returns for a new season (10 p.m. FX).
