Ben & Jerry’s knows you love cookie butter. The Vermont-based ice cream company knows about your late-night cravings, your cookie butter daydreams and your lack of self-control when it comes to eating the entire jar. And now, cookie butter is at the center of one of the company’s new core ice cream flavors.

Ben & Jerry’s Spectacular Speculoos Cookie Core, Boom Chocolatta! Cookie Core, and Peanut Buttah Cookie Core ice creams are the newest flavors in the company’s line of core flavors, which all feature a core of cookie, caramel, cookie butter and more surrounded by ice cream.

The Spectacular Speculoos Cookie Core incorporates caramel and vanilla ice cream with bits of Speculoos cookies and a column of Speculoos cookie butter in the middle. It’s like double-fisting a spoonful of cookie butter and a spoonful of ice cream followed by a bite of cinnamon spice cookies.

The Boom Chocolatta! Cookie Core is a mix of mocha and caramel ice creams with fudge flakes, bits of chocolate cookies and a cookie core that tastes like someone crushed up Oreo cookies -- just the cookie part -- and funneled it through the ice cream. Genius.

And last, the Peanut Buttah Cookie Core incorporates peanut butter ice cream with crunchy peanut butter sugar bits, peanut butter cookies and a peanut butter cookie core. Think a peanut butter cookie ice cream sandwich in a blender.

Unlike the previous Ben & Jerry’s core flavors, which we taste-tested early last year, these cookie core flavors have enough core to go around. And yes, in an act of public service, we sawed the ice cream pints in half so you could see the cores.
