Happy hour: Sustainable cocktails and Brussels sprout chips at Wildcraft

Ever heard of sustainable cocktails? At Wildcraft in Culver City, there really is a way to reduce food waste by drinking.

Instead of throwing out discarded pea shells, Fresno chile tops and citrus zest, chef Bryant Wigger is putting them to use in the bar’s happy hour cocktail program.

There’s a drink called the Riptide, made with Correlejo tequila, cilantro, pineapple and muddled Fresno chile tops. The Sweet Pea is made with lemon, mint, egg whites and vodka infused with discarded sugar snap pea shells. And in the Italian Stallion you’ll find beer, pepper, Clamato, tajin and spiced lemon lime salt made with leftover zest.

Each of the sustainable cocktails is $7 during happy hour.

And while you’re patting yourself on the back for figuring out a way to reduce waste by sipping a cocktail, you may want to reward yourself with something crunchy and salty to munch on, maybe a bowl of the crispy Brussels sprout chips.

The blistered leaves are piled high in a bowl and seasoned well with salt. And during happy hour, they’re $5.

The rest of the happy hour menu is on par with specials you’d find at one of Black House hospitality’s other restaurants (Litte Sister, Abigaile, Dia de Campo). Think barbecued lamb baby back ribs rubbed in a Sardinian spice, served over chickpeas with harissa ($10); and mussels with guanciale, saffron, garlic, white whine, chile and ciabatta ($8).

There’s a cheese melt with goat cheese, yuzu jam, arugula and prosciutto di parma ($7), and Tuscan melon with house-made mangalista lonza and basil ($6).

Also on the menu are the restaurant’s famous garlic knots and a “pie of the moment,” both made using a 30-year-old sourdough starter that ferments for three days before hitting a 900-degree oven. If you order the knots, yes, you will smell like garlic — and yes, it will be worth it.

Happy hour at Wildcraft is happening from 4 to 7p.m. Monday to Friday and 4 to 6 p.m. Saturday and Sunday.
