Twitter #Weekendeats highlights: Veggies and cocktails

In honor of Meatless Monday, we’re highlighting dishes that celebrate vegetables. During Monday morning’s #Weekendeats chat on Twitter, many participants shared photos and recipes of their veggie dishes, with a couple of pictures of libations thrown in. Here are the highlights:

Shulie Madnick from the blog FoodWanderings.com shared a recipe she got from Bon Appetit magazine for cauliflower steaks with capers, anchovy and raisins, which she made for Passover, and Susan Orlins shared a bunch of recipes she found on Pinterest, including one for a quinoa salad with pears, baby spinach, chickpeas and a maple vinaigrette.

The Adirondack Chick shared some photos of her tequila lime mushroom tacos, and Jessica Christensen, chef at City Tavern in Culver City, shared a picture of her fresh chickpeas, tomato, mint, cilantro and ginger.

Orly from the blog Yumivore.com went all out this past weekend with a “Mad Men”-inspired party. She made vodka gimlets, mushroom canapés, buckwheat blinis, bagna cauda (garlic, olive oil and anchovy dip) and gambas au beurre d’escargot (prawns in escargot butter).

And for dessert, a picture of Nutella dessert pizza from Pizzeria Olio in L.A., shared by Sinosoul.com.
