MOTHER’S DAY DINING : Mom Gets Chance to Turn the Tables on Her Day : She can be waited on--for brunch, lunch or dinner--whether she likes English or Chinese food or is a chocolate lover.

You wouldn’t dare let your mother--or your mother-in-law--cook on Mother’s Day, would you? Well, then, you know what to make for her: reservations. Here are a few suggestions.

For a “supercalifragilistic” brunch, the Disneyland Hotel will re-create the English park scene from the film “Mary Poppins.” Featured will be “Mary Poppins herself,” the penguin waiters, Pearly Band, carousel horses, topiary trees and flowers in bloom. Included is complimentary valet parking. The brunch, offered from 9:30 a.m. till 2:30 p.m. in the Terrazzo Room, will highlight English-style roast beef, fish and chips, spring harvest salads, English cheeses and a variety of desserts. Chef Guy Sockrider will create a four-course brunch at Monique in South Laguna. You can begin with soup, followed by a fruit plate of such exotics as kiwiano, cactus pear, as well as papaya. You can choose from nine entrees, which range from oyster and sun-dried frittata to salmon with orange-ginger-oregano sauce. Fresh foccaccini and zucchini bread accompany the meal, and desserts include New York cheesecake and profiteroles. Prices vary from $17.95 to $19.95, depending on entree choice, and include a flute of Domaine Chandon champagne. Or how about Chinese cuisine? The Mandarin Gourmet in Costa Mesa will present a grand buffet champagne brunch, with 10 appetizers, nine salad and seafood dishes and such entrees as oven fiery barbecued duck, fresh fish with black bean sauce, aromatic shrimp, lemon chicken, plus fresh fruits, rolls and pastries. It’s the custom in Japan to respect and honor parents. So at Restaurant Horikawa, you can expect gracious service with a number of items served in elegant lacquered boxes. Dining room prices for lunch (11 a.m. to 2 p.m.) range from $7.95 to $14.95 and for dinner (5 to 9 p.m.) from $12.50 to $35. If mother is a chocolate-lover, lead her straight to the table of chocolate delights at the champagne brunch at Dover’s in the Doubletree Inn. Offerings, served from 10 a.m. to 3 p.m., will vary from smoked salmon, shrimp and cracked crab to roast beef, omelets and pastas. In Garden Grove, LaFayette restaurant will present a three-course dinner from 1 to 7 p.m. The meal, which opens with an assortment of appetizers, includes the restaurant’s signature cream of watercress soup or house salad. Entrees vary from chicken cannelloni and duck with raspberry sauce to entrecote Bordelaise and Australian lobster trail, priced from $16 to $28. Seniors get a break at La Plaza Restaurant in the Anaheim Marriott, where the champagne brunch is $14.95 for the 62-plus group ($19.95 for other adults, $8.95 for children). A sampling of the buffet offerings: swordfish with saffron sauce, pork medallions with spinach and shiitake mushrooms, carved roast beef, chicken with eggplant and tomato. Members of the Pacific Symphony will join in the string quartet that will perform at Mon Chateau from 12:15 to 2:15 p.m. The sit-down brunch, served from 11 a.m. to 3 p.m., will comprise three courses: choice of appetizers, such entrees as leg of lamb, stuffed trout with crab meat in champagne sauce and fettuccine Provencale with mussels, scallops and shrimp, as well as dessert. Music will fill the air at Le Meridien Hotel on Mother’s Day. Gary Matsuura’s jazz quartet will play during Cafe Fleuri’s traditional Sunday buffet brunch. The Don Miller Big Band will entertain at Le Meridien’s brunch buffet, featuring more than 50 items, in the Deauville Ballroom. And a harpist will accompany a la carte service in Antoine, which will be augmented with a buffet of appetizers and desserts.

If you’d like an early start, Pero’s in Huntington Beach will open for breakfast at 7:30 a.m. Or you can come later for lunch, until 2 p.m. But dinner, beginning at 5 p.m., is celebration time, with specials of rack of lamb in mint sauce, filet mignon in mustard cognac sauce, and fresh fish.
