Future of food talk, Dominick’s pig roast, black truffle dinner at Saam

Los Angeles Times food editor Russ Parsons will continue his Future of Food series at the Aquarium of the Pacific with Anya Fernald, co-founder and chief executive of Belcampo Inc., on Wednesday. Fernald and Parsons will discuss humane organic meat farming and butcher shops, the slow food movement and agritourism. The Belcampo Inc. family of companies includes Belcampo Farms, Belcampo Butchery, Belcampo Meat Co. and six restaurants.

Fernald’s career includes launching a cooperative of cheesemakers in rural Sicily, launching Slow Food Nation and Eat Real and more. Doors open at 6:30 p.m.; the talk begins at 7 p.m. The aquarium’s exhibits will be open to attendees before and after the lecture. Tickets to the lecture can be purchased online; they are $8 for aquarium members and $10 for nonmembers. Dominick’s is partnering with Jameson Black Barrel Select for the restaurant’s annual pig roast Wednesday. From 5 p.m. to 10 p.m., the restaurant will be serving cracklings ($5), pig roast flatbread ($13), corzetti ($17), roasted pig ($19), roasted yams ($8), banana cream pie ($9) glasses of Dago wine and Jameson Black Barrel cocktails ($9). SLS Culinary Director José Andrés and chef de cuisine Holly Jivin Saam are hosting their annual black truffle dinner series at Saam through Feb. 28. The multi-course dinners will highlight truffles foraged by Truffle Brothers Michael and Marco Pietroiacovo in Abruzzo, Italy. The menus will be available on Thursday, Friday and Saturday evenings and are $275 per person. Optional wine pairings also will be available for $100 and $350.
