French Fries

French fries: They’re versatile, comforting, crunchy and addictive. They’re one of our favorite foods, and there are more varieties than you might imagine.

* Vida: Fred Eric serves “frog fries” as an appetizer: fried frogs’ legs mixed with French fries sprinkled with fleur de sel. They come in a lovely woven basket along with a sauce made from veal stock, cognac, green peppercorns and cream. The fries, quartered organic Yukon Gold potatoes (skin on), are boiled before frying to make them light, puffy and crisp. (Frog fries, $9; side of fries, $4.) * Farm of Beverly Hills: This casual spot won’t reveal how its fries come out so perfectly golden brown. All we know is that they’re medium-cut Idaho potatoes seasoned with salt, pepper and parsley and fried till crunchy and gorgeous. (Bowl of fries, $5.) Farm of Beverly Hills, 439 N. * Brentwood Restaurant and Lounge: This dimly lit neighborhood spot is the perfect place to bring a date for elegant thick-cut fries, lightly salted and served in a silver cone with either ketchup or “Brentwood sauce”--homemade Dijon mayonnaise. * Campanile: Fries are served with some sandwiches at lunch here, and you always get a giant heap of them on Thursday “grilled cheese sandwich” nights, when sandwiches come with these thin, lightly golden fries and a large pile of arugula salad. * Hollywood Fries: Into the wee hours of the night, this Westwood spot sells cones of medium-cut made-to-order fries topped with your choice of two dozen sauces, ranging from Gravy Quest II (gravy and cheese) to Taj Mahal (organic sweet mango and spices). * The Standard: This ultra-hip coffee shop makes long, skinny fries, crunchy outside and soft in the middle. They’re served in a brushed metal canister with ketchup, Dijon mustard or homemade herb mayonnaise. (French fries, $5.)
