Classic L.A. desserts, Marché Moderne choucroute, ‘Edible Selby’

L.A. sweets: The Culinary Historians of Southern California will present author Grace Bauer leading a panel titled “The Girls Are Baking: Los Angeles’ Classic Desserts” on Saturday, Oct. 20. Panelists include Jane Lockhart, owner of Sweet Lady Jane, known for her triple berry cream cake and sea salt brownies; Valerie Gordon, owner of Valerie Confections, who has re-created Blum’s coffee crunch cake, Chasen’s banana cream pie and Bullock’s coconut cream pie; and BLD pastry chef Mariah Swan, who is working on a new ice cream/doughnut/coffee concept. Choucroute and pork: Amelia and Florent Marneau of Marché Moderne welcome fall with a tribute to Alsace. The dinner showcases chef Florent Marneau’s modern interpretation of the classic choucroute (sauerkraut) and pork, nine different ways. The menu will be available at dinner only, starting from Thursday and until Nov. 11. Pork nine ways includes: braised cheek, Snake River Farms short ribs, pork belly, jambonneau, crispy pig’s ears, ham hocks au court bouillon, saucisse de Strasbourg fraîche, saucisse fumé and crispy pig’s feet. Served with sauerkraut, Weiser Farms German butterball potatoes and Dijon mustard. Dinner is $30 per person, or “en cocotte” for two at $55. Suggested beers and wines will also be available. ‘Edible Selby’: To promote the launch of his book “Edible Selby,” portrait, interior and fashion photographer and illustrator Todd Selby is hosting a meet-and-eat book signing at new Echo Park restaurant Cortez on Sunday, Oct. 28.
