It’s Not Just Caviar, It’s Karaburun
Re “It Looks Like Hard Times Ahead for the Caviar Crowd,” Aug. 12:
It seems that the research department missed one other variety, beyond beluga, sevruga and osetra.
Karaburun is actually the variety that the cognoscenti consider the most treasured. Not surprisingly, it’s also the least known. It was only recently reintroduced to the U.S. market after its virtual disappearance, due to the Iranian revolution, when the necessary ban on Iranian imports was put in place. It too is found only in the Caspian Sea.
However, it occurs in the smallest of ranges within its waters and its harvest is controlled exclusively by the Iranians.
