At this time of year, I find I’m fed up with rich food--oatmeal tastes great for breakfast, I crave vegetable juice, and I want to add more soy to my diet.

This quick breakfast drink is based on a vanilla-flavored, milk-like beverage made from soybeans, filtered water and vanilla. You’ll find it in cartons in supermarkets, health food and specialty stores. Soy milk is cholesterol-free, lactose-free and low in fat. It can often be used in place of milk.

Place the soy beverage, mango, lime juice, mint leaves and honey into the jar of a blender. Process until smooth. Pour into 2 glasses and serve.
