Combine the lemon and orange juices, the simple syrup, bourbon and bitters in a cocktail shaker with a few ice cubes. Shake gently and strain into a martini glass. Top with the Prosecco. Float a paper-thin orange slice on top.

From Karen Hatfield at Hatfield’s. The restaurant uses Knob Creek bourbon for this cocktail. To make simple syrup, combine equal parts sugar and water in a small saucepan over low heat until the sugar completely dissolves. Allow to cool before using.
