There’s nothing quite like raising a delicious cocktail in the name of a good cause. Lucques, AOC and Tavern barman Christiaan Rollich knows this to be true, which is why he created a special cold-weather drink called the Pinkerton for a recent L.A. Loves Alex’s Lemonade event. Dubbed a “decadent chefs’ cookout,” the annual event brings together the city’s best chefs and mixologists to raise funds in the fight against childhood cancer. For his spin behind the bar, Rollich put together a savory beer cocktail that blends potent blackstrap molasses with rich stout, a bit of tart lime juice and a kiss of sweet apple juice. A healthy pour of genever (Dutch gin) adds complexity and provides kick.

In a shaker, combine the genever, molasses, lime and apple juice, stout and bitters. Dry shake, then add ice and shake again. Strain into a martini glass and garnish with the lime zest.
