This recipe comes from a wildly successful cookbook written in 1902 called “Mrs. Rorer’s New Cookbook.” It was written by Sara Tyson Rorer, who was respected for her tasty dishes.
When I tried this, she didn’t disappoint me. Of Spanish Rice With Chicken, she wrote, “If this dish is properly cooked and seasoned, it is delicious.”
True. Rice is one of the oldest staple foods. Very nourishing and simple to cook, it is a fine companion with fish, meat, chicken and of course, leftovers. Use long-grain white rice for this recipe.
