Mr. C Cocktail

In a cocktail shaker, combine the puree, vodka, Prosecco and lemon juice with ice. Shake lightly and pour into a rocks glass or strain into a flute. Top with more Prosecco to make it extra bubbly for the summer.

Adapted from Mr. C Beverly Hills. To make mandarin puree, peel the fruit and puree in a food processor, sweetening as desired with sugar; press the puree through a sieve, discarding the solids.
