Vieux Mot

Pour the gin, elderflower liqueur, simple syrup and lemon juice into a shaker filled with ice. Shake, then strain into a chilled coupe.

Adapted from a recipe by bar manager Don Lee of PDT. To make simple syrup, place equal amounts of water and sugar in a small saucepan over medium heat; heat until the sugar dissolves. Allow to cool before using. St-Germain elderflower liqueur is available at many fine wine and liquor retailers.
