Idea for new article:
Take 1 item & discuss how cooked in different cultures, like beef brisket:
1) BBQ'd in Texas for 18 hours
2) Corned beef in Ireland
3) Pot roast in Jewish deli's
4) Pastrami in Turkey
5) Chili Colorado, or taco filling, in Mexico
6) Chopped & served as corned beef hash in US breakfasts
Good luck.
East Asian beef on a quiz? A few words...
Korea, China & Vietnam don't eat much beef because of cost, less open land.
More importantly, E Asian cuisine mostly views knives as barbaric, for kitchen workers only, & so diners don't get them. Shove food in Waring blender & pour on plate. Beef? Who knows? It didn't meow...
Means steak is pre-cut, often before cooking, which renders fat fast (dry), or undercooks to leave fat in before liquifying (raw). How do you like it? Dry or raw?
'Steaks' I've eaten in E Asian restaurants are served pre-sliced, covered with an unexplained sauce, & often have much gristle & cartilage. Apparently they like to chew.
Aging or rubs? Ha ha. They also avoid dairy products, lactose intolerant, so no butter or bleu cheese melting option, & no desserts.
Whatever. They can have it.
